Balsamic Brussel Sprouts

3 lbs fresh Brussels sprouts
5 tbsp balsamic vinegar
6 cloves garlic (minced)
1 1/2 tsp salt
3/4 tsp ground black pepper
1 tsp canola oil
1/2 cup parmesan cheese (optional, shredded)

Rinse sprouts in cool water and then chop off the tough ends. Chop sprouts in half.
Heat 5 qt pot and heat to 385 on stove top. Whisk together oil, and half balsamic vinegar. Add the chopped sprouts and then toss to combine.
Mix pot occasionally until just prior to preferred crisp. Add salt, garlic, remaining vinegar. Serve warm, add parmesan if desired.
